Slowly stir grits into boiling salted water. Turn heat off. Add margarine and cheese to grits mixture. Cool.
Add eggs, sherry, Lea & Perrins, Tabasco, and chiles. Spoon mixture into greased baking dish and bake 1 hour at 300°.
Note: This freezes well. Water will appear on top, but just remix and reheat. Superb with ham or chicken.
