Lightly brown ham in small amount of butter. Place ham slice on each muffin half and top with poached egg. Keep warm while preparing Mornay Sauce. Pour Mornay Sauce over eggs and sprinkle with chives. Serve immediately.
Mornay Sauce:
Melt butter in saucepan. Blend in flour, salt, nutmeg, and pepper. Stir until smooth and bubbly. Add cream all at once and cook quickly, stirring constantly until mixture thickens and bubbles. Stir in wine. Add cheese and stir until melted. Use at once.
