1. Reserve 1/3 cup of the blue cheese. Mix remaining blue cheese and the cream cheese in small bowl until well blended.
2. Stir in mayonnaise and half-and-half until creamy. Stir in reserved blue cheese. Cover and refrigerate at least 3 hours to blend flavors. Store covered in refrigerator.

Lighter Blue Cheese Dressing: For 3 grams of fat and 35 calories per serving, decrease blue cheese to 1/2 cup. Substitute 1/2 package (8-ounce size) reduced-fat cream cheese (Neufchâtel) for the regular cream cheese and 1/4 cup fat-free (skim) milk for the half-and-half. Use reduced-fat mayonnaise.
