Hearty Cassoulet

Ingredients

1 onion large, chopped
3 carrots small, thinly sliced
3 cloves garlic minced
3 (15-ounce) cans northern beans
3 teaspoons chicken bouillon
1 tablespoon tomato paste
1 bay leaf medium
1 teaspoon thyme dried, crushed
1/4 teaspoon black pepper
1 1/2 pounds chicken thighs or pork loin chops, cut in half
1 pound smoked sausage garlic sausage links
1/4 pound bacon

Directions:

Preparation Time: 15 minutes
Slow Cooker Cooking Time: 3 1/2 to 4 hours on high or 7 to 8 hours on low
Last-Minute Cooking Time: none
1. Layer in a slow cooker, in order, onion, carrots, garlic, beans with liquid, bouillon granules, tomato paste, bay leaf, thyme, pepper, chicken or pork, sausage and bacon. Do Not Stir.

2. Cover and cook on high for 3 1/2 to 4 hours or on low for 7 to 8 hours or until vegetables and meat are tender.

Serve with broiled tomatoes, hot French bread and sweet pickles.
