Cream margarine and brown sugar in a bowl with an electric mixer. Beat in egg and vanilla, mixing well. Combine flour, oats, baking soda, and salt in a bowl. Add flour mixture to the creamed mixture. Stir in chocolate chips. Spread cookie mixture on a greased 12-inch baking sheet and bake at 350° for 14–16 minutes or until golden brown.
Cool cookie completely on a wire rack. Spread frosting over cookie with a knife. Sprinkle cookies with M&M’s, grated white chocolate, and gumdrops. Cut strawberry fruit roll-ups into circles for the “pepperoni” look and arrange them on cookie pizza. Cut into wedges.
Fun Fact: Tuskegee University was established in 1880 by an act of the Alabama State Legislature. The school’s first president, Dr. Booker T. Washington, officially opened the Normal School for Colored Teachers on July 4, 1881, and served until his death in 1915. Dedicated in 1922, the Booker T. Washington Monument, called “Lifting the Veil,” stands at the center of campus.
