For a pretty and colorful rosette, start with a medium, firm tomato. With a sharp paring knife, cut a circle at the base but do not cut all the way through. Continue peeling off a thin circular strip round and round the tomato. Use a sawing motion and don't worry if the strip is not perfectly even; it will look more natural if it is irregular. Curl the strip so it sits nicely on its base.
