The fresher the egg, the more difficult it may be to peel. Allow very fresh eggs to stand at room temperature for a few hours before cooking. To peel, crack the shell gently all over. Roll it between your hands to loosen the shell. Starting at the large end, peel under cold running water, and hope for the best. Some eggs will still be stubborn no matter how careful you are.
