Sweetbreads are a tender delicacy obtained from calves and lambs. These very perishable glands should be used immediately. If this is not practical, freeze or precook them. Mix 1 quart of water with 1 tablespoon lemon juice or vinegar. Add sweetbreads and simmer for 30 minutes. Cool and remove the outer membrane and connective tissue. Refrigerate and use a soon as possible. To prepare for an immediate recipe, soak the sweetbreads in cold water, then remove the membranes. Proceed to broil, sauté, braise or cook in a sauce as the recipe directs.
