Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold water and sugar-free cherry pie filling. Refrigerate 1 hour or until slightly thickened and consistency of unbeaten egg whites.
Place cake cubes in 3-quart serving bowl. Spoon gelatin mixture over cake. Refrigerate about 45 minutes or until set but not firm (gelatin should stick to finger when touched and should mound). Pour milk into large bowl. Add pudding mixes. Beat with wire whisk 1 minute. Gently stir in 2 cups whipped topping. Spoon over gelatin mixture in bowl. Refrigerate 2 hours or until set. Top with remaining whipped topping and garnish as desired.
Editor’s Extra: Can also be layered in a glass trifle dish for a beautiful presentation.
Fun Fact: One of the world’s most famous inventors was Thomas A. Edison, who invented the movie camera and phonograph in his labs in West Orange and Menlo Park, New Jersey. Also, the first incandescent lamp was made by Edison in 1879 in Menlo Park; Roselle, New Jersey, became the first town in the nation to be lighted by electricity in 1883. (The New Jersey town of Edison is named after him.)
