Preheat the oven to 350° for 10 minutes before the pies are ready to be baked. Do not bake the shells.
Beat the eggs well. Add the brown sugar, corn syrup, and 1 1/2 teaspoons of vanilla. Mix well. Add the melted butter and peanuts. Add the raisins, if desired. Pour the mixture into the pie crust shells. Bake at 350° for 40 minutes. Cool on a rack.
Whip the cream until stiff. Add the confectioners’ sugar and 1/2 teaspoon of vanilla. Garnish the pies with the sweetened whipped cream.
