Combine ingredients, mix well, and set aside.
Pastry:
Combine flour and salt. Cut in shortening. Sprinkle with water. Press dough into a ball. Roll out 1/3 of the dough and cut into thin strips. Roll out remaining dough for top crust.
Pour 1/2 the peach filling into a buttered 9x13-inch baking dish. Cover with pastry strips. Add remaining filling. Dot with butter, and cover with top crust. Slit center of top crust several times. Bake in 350° oven 1 hour.
