Slice, but do not peel apples; place in heavy 10-inch skillet. Combine butter, brown sugar, cornstarch, and cinnamon together, mixing well. Toss with apples, stirring to coat all pieces. Add water to skillet. Put lid on skillet and cook over medium heat 12–15 minutes till apples are fork-tender and sauce is thick, stirring occasionally. To serve, either spoon all in a medium-size serving bowl or divide into 4 individual serving bowls, ladling 1/2 cup sauce into each bowl.
Note: After the apples are tender, you can remove skillet from heat and add 2 tablespoons apple liqueur (Applejack).
