Spinach-Artichoke Casserole

Ingredients

1/2 cup chopped onion
1/2 cup butter or margarine
2 (10-ounce) packages frozen chopped spinach, thawed, drained
1 (14-ounce) can artichoke hearts (in water), cut-up coarsely
1/2 cup grated Parmesan cheese
1 cup sour cream
1 (4-ounce) can chopped mushrooms
1/4 teaspoon red pepper

Directions:

Sauté onion in butter. Combine all other ingredients and add to onions. Bake in a deep (2 1/2- or 3-quart) casserole dish covered at 350° for 25 minutes. (Can be baked in microwave at 50% power for 25 minutes). Serves 4 when used as a main dish or 6 when used as a vegetable.
