Pour boiling water over oatmeal. Let stand 10 minutes. Cream shortening, brown sugar, and white sugar. Add to oatmeal mixture. Add eggs one at a time. Sift flour, soda, salt, cinnamon, nutmeg, and add to mixture. Stir just enough to mix. Add vanilla. Pour into greased 9x13-inch pan and bake in 325° oven 35–40 minutes.
Topping:
Cream margarine, sugar, and egg yolks together. Add pineapple and nuts (if desired, use one or the other). Spread on cooled cake. Brown under broiler. Serve warm.
