Yield: 1 large or 2 small cheese crocks
Combine all ingredients and blend together by hand. (Do not use a food processor, as it will purée the chopped ingredients.) Put in a crock and chill until ready to serve. Serve with crackers, Melba toast, or dark bread rounds.
Fun Fact: How did North Carolina get the nickname the Tar Heel State? The story goes that during one of the fiercest battles of the War Between the States, the column supporting the North Carolina troops was driven from the field. After the battle, the North Carolinians, who had successfully fought it out alone, were greeted from the passing derelict regiment with the question, “Any more tar down in the Old North State, boys?” The answer: “No, not a bit; old Jeff’s bought it all up. He’s going to put it on you-un’s heels to make you stick better in the next fight.” General Lee, upon hearing of the incident, said, “God bless the ‘Tar Heel’ boys.” And from that the nickname “stuck.”
