Sausage & Cheddar Grits

Ingredients

4 cups water
1 teaspoon salt
1 cup quick cooking grits
4 eggs, beaten
1 pound ground pork sausage, browned and drained
1 1/2 cups shredded Cheddar cheese, divided
1 cup milk
1/4 cup butter

Directions:

Bring water and salt to boil in a large saucepan over medium heat. Stir in grits; cook for 4 to 5 minutes. Remove from heat. Stir a small amount of hot grits mixture into eggs; stir egg mixture into saucepan. Add sausage, one cup cheese, milk and butter; blend together well. Pour into a greased 13"x9" baking pan. Sprinkle with remaining cheese. Bake, uncovered, at 350 degrees for one hour, or until cheese is golden. If cheese is getting golden early, cover with aluminum foil. Let cool for about 10 minutes before serving.
