Kicked-Up-A-Notch Egg Salad

Ingredients

2 hard-boiled eggs, diced
2 - 3 tablespoons mayonnaise
salt and pepper to taste
2 tablespoons finely chopped chives
1/2 - 1 teaspoon red curry powder
lettuce leaves or toasted bread
2 tablespoons chopped pecans or almonds

Directions:

Combine eggs, mayonnaise, salt and pepper, chives, and curry powder. Serve on lettuce leaves and top with chopped nuts for salad (or on toast for sandwich). If desired, sprinkle with a little red curry powder as garnish.
