Marinated Veggie Salad

Ingredients

1/4 cup vinegar
3/4 cup oil
2 tablespoons coursely grated onions
3/4 cup sugar
1 teaspoon dry mustard
2 stalks broccoli, chopped
1/2 head cauliflower, chopped
3 ribs celery, chopped
6 large mushrooms, sliced
1/2 red bell pepper, chopped

Directions:

Combine vinegar, oil, onion, sugar, and dry mustard in quart jar with lid; shake well. Combine vegetables in large bowl; toss with dressing. Chill, covered, for several hours or overnight.
