Ingredients

1/2 pound beef, chopped in small cubes (any tender cut)
2 tablespoons butter
1 (16-ounce) can artichoke hearts, drained, thinly sliced
1 pint sour cream
1/2 cup dry white wine (or sherry)
1 tablespoon grated Parmesan cheese
English muffin or toast points
paprika to garnish

Directions:

Brown beef in butter in skillet. Stir in artichoke hearts, sour cream, white wine, and Parmesan cheese. Cook until well blended and heated thoroughly. (If thin, thicken with a little cornstarch.) Serve on toasted English muffins or toast points. Sprinkle with paprika.
