Sprinkle lemon juice and salt evenly over pork cubes. In small saucepan, make glaze by mixing together the jelly, lemon juice, cinnamon, and butter. Simmer until well blended (makes 1 1/4 cups).
Thread pork onto skewers and spoon glaze over all. Grill over hot coals, 10–12 minutes, turning frequently. Baste frequently.
Editor's Extra: This can be done with most any flavor of jelly or preserves. Children could help here, threading the pork cubes while a parent makes the glaze.
Fun Fact: The International Apple Festival is held each summer in Medina, Texas, featuring every imaginable apple creation from pies to pizzas. You’ll know you’re in Medina when you see the big apple—a 20-foot high stone sculpture of an apple in the city park.
