Heat oven to 400°. Spray a 10-inch pie plate with vegetable cooking spray. Sprinkle ham, cheese, and onions in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake until golden brown and knife inserted in center comes out clean, 35–40 minutes. Cool 5 minutes.
Even Easier: A food processor does it all—chop ham and spread in pie plate, then cheese slices, then onion, then egg mixture.
