Mix together bread crumbs and Parmesan cheese. Spread mixture on a plate. Roll chicken breasts in mixture until coated. Spray large skillet with vegetable oil cooking spray and heat to medium. Cook chicken for 5 minutes, then turn and cook another 5 minutes, or until thoroughly cooked. Remove chicken from skillet and keep warm.
Mix together cornstarch and tomatoes in skillet; cook on medium heat and stir constantly for about 4 minutes. Place chicken breasts on individual plates and spoon over tomato mixture. Top with sautéed mushrooms, if desired. Serve with a green salad and a side dish of pasta.
