Oil large baking dish. Dredge chicken in flour and place in dish. Sprinkle onion soup over top. Place sliced vegetables on soup. Combine sherry and cream soup. Spread over chicken and vegetables. Dot with paprika. Cover with foil and bake at 350° for at least 1 hour 15 minutes.
Even Easier: This only takes 13 minutes to assemble with boneless chicken breasts and canned or baby carrots, and is ready in one hour. The sherry gives it a unique flavor. The sauce is so good, you’ll want to serve it over rice. Put some whole potatoes or sweet potatoes in the oven to bake at the same time. Come back in an hour for a super meal.
