Thinly slice chicken. In a wok or large skillet, heat corn oil over medium-high heat. Add chicken, a few slices at a time. Stir-fry 3 minutes or until browned, removing slices that are cooked. Return all chicken to wok. Add orange peel, garlic, and ginger. Stir-fry one minute.
Sauce:
Stir together sauce ingredients in a small bowl. Stir into chicken. Stirring constantly, bring to a boil over medium heat and boil several minutes. Serve over rice or pasta.
