1. Preheat oven to 375°. In a 9-inch baking dish or pie plate, place pineapple rings sprinkle with pineapple juice and rum extract. Let stand for 10 minutes, basting occasionally.
2. Bake pineapple for 10 minutes. Remove, baste with juices, and turn oven setting to broil. Sprinkle each pineapple slice with 1 1/2 teaspoons of the brown sugar and broil 5 to 6 inches from heat source for 1 to 2 minutes or until sugar is caramelized. Remove from broiler, baste with juices and sprinkle with cinnamon.
3. Serve pineapple immediately on small dessert plates. Garnish each with a strawberry.
