Preheat oven to 350°. Toast walnuts in oven, then coarsely chop and set aside. Prepare muffin papers for 16 muffins. Set pans aside.
Cream Cheese Filling:
Combine and cream well soft cream cheese, powdered sugar, and salt. Blend in chocolate chips. Set aside.
Muffin Batter:
In a bowl, sift dry ingredients. Add chopped nuts. Set aside. In mixer bowl, blend oil, egg, orange juice, bananas, and vanilla. Slowly add dry ingredients and blend. Divide batter evenly between prepared muffin cups, reserving a small amount. Top each muffin with a teaspoon of Cream Cheese Filling and press down slightly. Put a small amount of reserved batter on top of each muffin to cover cream cheese. Bake at 350° for 20–25 minutes.
