Chiles Rellenos

Ingredients

1 1/2 teaspoons butter
1 (4-ounce) can whole green chili, drained, split, and seeded
1/2 pound Tillamook or Monterey Jack cheese, sliced
5 eggs
1/4 teaspoon salt

Directions:

Melt butter in a 9x9-inch baking pan. Place chiles in pan and cover with cheese slices, leaving about 1/2 inch between slices. Beat eggs with salt and pour over cheese. Bake in preheated 325° oven until cheese is melted and eggs have set, about 25 minutes. Remove from oven. Let sit for 20 minutes, then cut into squares.
