In each cup of a greased 12-cup muffin tin, place 3 pecan halves, 2 teaspoons butter and 2 teaspoons brown sugar. Bake at 450 degrees just until butter melts; set aside. Combine remaining ingredients in a mixing bowl, beating about 20 strokes. Spoon mixture into muffin cups. Bake for 10 minutes at 450 degrees; invert on a serving plate. Serve warm.
Tip: Serve up special coffee with breakfast…add a dash of nutmeg, cinnamon or orange zest just before brewing. A drop of vanilla added at serving time is nice too.
