Make 36 mini tarts using either tart pan or small muffin pan. Lightly bake. Melt butter; add lobster, onion, and parsley. Sprinkle with lemon juice and flour. Add cream, which has been blended into yolk and brandy. Fill tarts with mixture and sprinkle with cheese. Bake at 375° for about 20 minutes.
