Serves: 6
1. Heat oven to 350°.
2. Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2 X 4 1/2 X 2 1/2 or 9 X 5 X 3 inches, or shape into 9 X 5-inch loaf in ungreased rectangular pan, 13 X 9 X 2 inches. Spread ketchup over top.
3. Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until beef is no longer pink in center, juice is clear and thermometer reads at least 160°. (Also see Recommended Meat Doneness)** Drain meat loaf.
4. Let stand 5 minutes remove from pan.
*1/2 cup dry bread crumbs or 3/4 cup quick-cooking oats can be substituted for the 3 slices bread.
**Due to the natural nitrate content of certain ingredients often used in meat loaf such as onions, celery and bell peppers, meat loaf may remain pink even though beef is cooked to 160 ° doneness. Always check meat loaf with a thermometer to make sure it’s reached 160 ° in the center.

Lighter Meat Loaf: For 2 grams of fat and 195 calories per serving, substitute ground turkey breast for the ground beef and 1/4 cup fat-free cholesterol-free egg product for the egg. Use fat-free (skim) milk. Bake uncovered 1 hour to 1 hour 15 minutes or until turkey is no longer pink in center and thermometer reads 165°.
Individual Meat Loaves: Grease 12 medium muffin cups, 2 1/2 X 1 1/4 inches, with shortening, or spray with cooking spray. Divide beef mixture evenly among cups (cups will be very full). Brush individual loaves with about 1/4 cup ketchup. Place muffin pan on cookie sheet in oven (to catch any spillover). Bake about 30 minutes or until loaves are no longer pink in center and thermometer reads 160° when inserted in center of loaves in middle of muffin pan (outer loaves will be done sooner). Immediately remove from cups.
Mexican Meat Loaf: Omit sage. Substitute 2/3 cup milk and 1/3 cup salsa for the 1 cup milk. Stir in 1/2 cup shredded Colby–Monterey Jack cheese (2 ounces) and 1 can (4 ounces) chopped green chilies, drained, in step 2. Substitute 2/3 cup salsa for the ketchup.
