1. Mix beef, potatoes, onion, parsley, salt and pepper.
2. Heat oil in 10-inch skillet over medium heat. Spread beef mixture evenly in skillet. Cook 10 to 15 minutes, turning frequently, until brown.

Oven Hash: Heat oven to 350°. Grease square baking dish, 8 X 8 X 2 inches, with shortening. Omit oil. Spread beef mixture evenly in baking dish. Bake uncovered about 20 minutes or until hot.
Red Flannel Skillet Hash: Use 1 1/2 cups chopped cooked corned beef and 3 small potatoes, cooked and chopped (1 1/2 cups). Mix in 1 can (15 ounces) diced or shoestring beets, drained.
