1. Wash rice thoroughly. Fill saucepan half-full of water and bring to a boil.
2. Add rice and 1 teaspoon vinegar and cook uncovered 15 to 18 minutes over medium heat, stirring occasionally.
3. Place rice in a sieve and drain. Hold sieve under hot-water tap and rinse rice thoroughly to separate grains.
NOTE: Never put cooked rice under the cold-water tap. This will wash away its flavor.
