1. Cook rice (see any Basic Boiled Rice or Steamed Rice recipe).
2. While the rice cooks, prepare topping.
3. Add to fully cooked rice as indicated below.
TOPPING:
1. Shred cooked chicken.
2. Peel tomatoes place in a saucepan. Sprinkle with salt and pepper and let simmer until reduced to a pulp (about 5 minutes).
3. Transfer cooked rice to a serving dish. Pour tomatoes over, top with chicken shreds and serve.
