1. Wash rice thoroughly. Place in a pan with plenty of water.
2. Boil 5 minutes, stirring a few times. Drain.
3. Place rice in a bamboo steamer lined with cheesecloth. Pierce rice several times with chopsticks or fork, making small holes to let the steam pass through.
4. Cover pan. Steam over medium heat for 20 minutes.
NOTE: The liquid drained in step 2 can be reserved, mixed with sugar and served separately as a thin congee.
