1. Cook rice (see any Basic Boiled Rice or Steamed Rice recipe).
2. While the rice cooks, prepare topping.
3. Add to fully cooked rice as indicated below.
TOPPING:
1. Shred beef and onion.
2. Heat oil. Add beef and stir-fry until it loses its redness. Then sprinkle with soy sauce.
3. Add onion and salt stir-fry another 2 minutes.
4. Transfer cooked rice to a serving dish top with stir-fried beef mixture and serve.
VARIATION:
* For the onion, substitute any of the following vegetables, shredded: 1 green pepper, 1/2 pound Chinese lettuce or 1/2 cup preserved cabbage. (With the preserved cabbage, use less salt.)
