In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt and spices. In a separate bowl, blend together shortening, molasses and egg; stir into flour mixture and blend well. Shape dough into a ball; wrap in wax paper and refrigerate for one hour, or until dough is firm. On a lightly floured surface, roll out dough to 1/8 to 1/4-inch thickness and cut with a cookie cutter. Arrange on an ungreased baking sheet. Bake at 350 degrees for 8 minutes, or until golden. Frost and decorate, if desired.
Dress up simple shortbread cookies with a yummy cinnamon glaze. Combine ½ cup cinnamon baking chips with one teaspoon shortening in a microwave-safe bowl. Microwave on high for one minute, stir, then drizzle cookies with glaze.
