In a large bowl, blend together sugar and shortening. Beat in eggs, molasses, flour and spices. Dissolve baking soda in hot water; stir in vinegar and add to flour mixture. Divide dough into thirds and roll out on a lightly floured surface to about 1/8-inch thickness. Cut out with round cookie cutters and arrange on an ungreased baking sheet. Bake at 350 degrees for 10 minutes, or until very lightly golden around edges. Cool; frost with Fluffy Frosting.
For Fluffy Frosting:
Combine all ingredients except vanilla and food coloring in a double-boiler over medium heat. Heat water in bottom of double-boiler over medium-high heat; do not bring water to a boil. Using an electric mixer, beat mixture 8 minutes, or until stiff peaks form. Remove from heat; stir in vanilla and food coloring to tint a soft pink. Beat until thick enough to spread.
