Place pork slices between 2 sheets of wax paper. Gently flatten to 1/4-inch thickness with a rolling pin; set aside. In a large bowl, stir together bread crumbs and flour. Coat pork slices in flour mixture. Add butter and oil to a large saucepan; cook pork over medium-high heat until golden on both sides and cooked through. Remove to a platter and keep warm. In same saucepan, sauté mushrooms until golden; add sherry or broth and parsley. Stir until all browned bits are dissolved. Serve pork slices and sauce over rice or noodles.
