Melt butter in a skillet; add onions and sauté until golden. Remove from heat; stir in sour cream and 1/2 cup cheese. Set aside. Combine muffin mix, egg, milk, sauce and corn in a medium bowl; mix well. Turn muffin mixture into a greased 9"x9" baking pan. Top with onion mixture; sprinkle with remaining cheese. Bake, uncovered, at 350 degrees for one hour.
Tip: Give a familiar cheesy casserole extra zing…simply try a different flavor of cheese like Pepper Jack or sharp Cheddar.
