Bake potatoes at 375 degrees for one hour, or until tender. Cool. Cut a thin slice off the top of each potato and scoop out insides, leaving a thin shell. Mash potato with butter in a mixing bowl; blend in milk, onion, bacon, salt, pepper and one cup cheese. Spoon mixture into potato shells; place on a lightly greased baking sheet. Bake at 375 degrees for 25 minutes. Top with remaining cheese; bake an additional 5 minutes, until cheese melts.
Tip: Make sure your cutting boards smell fresh and clean…just rub them with the cut side of a lemon half.
