Beat cream cheese until creamy; set aside. Stir gelatin mix into boiling water until dissolved; gradually add to cream cheese. Add remaining ingredients except soda; mix well. Slowly add soda. Pour into a glass serving dish. Chill until set, about 2 hours.
Tip: Let gelatin set to semi-firm, about the consistency of cold egg whites, before adding fruit pieces and mini marshmallows. Then push them right in…they won't float or sink!
