Preheat oven to 450°.
Place apples in a large bowl. In a small bowl, mix 3/4 cup sugar, flour, and cinnamon. Toss with apples to mix well.
Spread mincemeat evenly in pastry-lined pie plate. Top with apple mixture. Complete crust as directed in pastry recipe. Brush top of pastry with egg white and sprinkle with sugar.
Bake 10 minutes reduce oven temperature to 350° and bake 40 minutes longer or until filling is bubbly in center and crust is golden brown. Cool on a wire rack.
Serve at room temperature with ice cream if desired.
