In a small bowl, mix flour, 1/2 cup brown sugar, and cheese. With a pastry blender or two knives, cut in butter until mixture resembles coarse crumbs set aside.
In a large bowl, toss pears with lemon juice. In a small bowl, stir 1/2 cup brown sugar, cornstarch, and ginger until well mixed. Sprinkle over pears and toss to coat. Spoon into pastry shell. Sprinkle with crumb topping.
Bake in preheated 400° oven 45 minutes or until top is golden brown. Cover loosely with foil during baking if browning too quickly. Cool on a wire rack.
