Preheat oven to 450°.
Combine sour cream, 3/4 cup sugar, egg, 2 tablespoons flour, salt, and vanilla. Beat until smooth. Add apples toss to mix thoroughly. Pour into pastry shell.
Bake 15 minutes reduce oven temperature to 325° and bake 20 minutes. Remove from oven.
Meanwhile in a small bowl, mix 1/3 cup sugar, 1/4 cup flour, and cinnamon. With a pastry blender or two knives, cut in butter until mixture resembles coarse crumbs. Sprinkle over pie. Bake 20 minutes longer. Cool on a wire rack. Refrigerate leftovers.
