4 cups flour
1 1/2 cups sugar
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups cranberries cleaned and halved
1 cup nuts chopped
2 teaspoons orange rinds grated
1 1/2 cups orange juice concentrate
1/2 cup vegetable oil
2 eggs beaten
Preheat oven to 375° F. Lightly grease and flour three 7 1/2 x 3 3/4 x 2 1/4 -inch loaf pans. Into a large bowl sift together flour, sugar, baking powder, baking soda and salt. Stir in cranberries, nuts and orange rind.
In a small bowl combine juice, oil and eggs. Pour into flour mixture; gently combine. Pour into pans and bake for 45 to 55 minutes or until done Remove from pans; cool on wire racks.
