1 cup flour sifted
1 cup milk
2 eggs
1/4 teaspoon salt
Preheat oven to 450° F. Heavily grease 12 muffin-pan cups or custard cups. Place in oven for 5 minutes. In a small bowl beat together flour, milk, eggs and salt until smooth. Fill hot cups two-thirds to three-fourths full and bake for 20 minutes. Decrease temperature to 350° F. (do not open oven door) and bake 20 minutes longer or until golden brown. Serve immediately. If popovers get brown before baking is over, turn oven off and let popovers finish baking.
* At altitudes above 5,000 feet, use 4 eggs.
