1 head cauliflower
1/2 cup celery chopped
1/3 cup onions chopped
1/3 cup green bell peppers, chopped
3 tablespoons margarine
1 tablespoon cornstarch
1 cup milk
1 cup swiss cheese, shredded
3/4 teaspoon salt
1 tomato sliced
1/8 teaspoon paprika
Break cauliflower into flowerets and cook in small amount of salted water till tender. Drain and pour into shallow baking dish. In small saucepan, saute celery, onion, and green pepper in melted margarine till tender crisp. Add to cauliflower. In same pan, mix cornstarch and cold milk and bring to boil, stirring till thickened. Stir in Swiss cheese and salt. Pour sauce over vegetables. Top with sliced tomato and sprinkle with paprika. Bake at 350 degrees F. 20 minutes.
