6 potatoes
3 slices bacon
1/2 cup sour cream
1/2 cup milk
1 1/2 teaspoons salt
1/8 teaspoon black pepper
4 green onions, chopped
1/2 cup cheddar cheese, shredded
Preheat oven to 400 degrees F. Wash potatoes and rub skins with oil. Bake for 1 hour, or till potatoes are done. While potatoes are baking, cook bacon till crisp. Drain and crumble; set aside. Reduce oven heat to 350 degrees F. Cut a slice from top of each potato and scoop out pulp. Mash pulp; add sour cream, milk, salt, pepper, and green onions. Fill potato shells with mixture and sprinkle with shredded cheese and crumbled bacon. Bake at 350 degrees F. for 10 minutes.
