6 onions peeled and sliced
1 cup water
2/3 cup milk
2 tablespoons butter
2 tablespoons flour
1 egg yolk, beaten
1/4 teaspoon salt to taste
1/8 teaspoon black pepper, to taste
1/4 cup bread crumbs
2 tablespoons butter melted
3 tablespoons almonds slivered
Combine sliced onions with water and cook till tender. Drain, saving liquid, and place onions in casserole dish. Mix onion liquid with milk in saucepan. Make roux by mixing butter and flour. Add roux to hot liquid and stir till thickened. Stir in beaten egg yolk and salt and pepper. Pour sauce over onions. Combine bread crumbs and butter. Top onions with buttered bread crumbs and slivered almonds. Bake at 350 degrees F. till heated through.
