3 zucchini
1 1/2 cups bread crumbs soft
1/4 cup parmesan cheese, grated
1 egg beaten
2 green onions, minced
1 tablespoon parsley minced
1/2 teaspoon salt
1/8 teaspoon paprika
Wash zucchini; cut off ends but don't peel. Cook in boiling, salted water for 7 to 10 minutes. Cut in half lengthwise; carefully remove pulp with spoon, leaving shell intact. Mash zucchini pulp with fork and mix with bread crumbs, Parmesan cheese, beaten egg, onions, parsley, and salt. Spoon mixture into shells and place in baking dish. Sprinkle with additional Parmesan cheese and paprika. Bake uncovered at 350 degrees F. for 30 minutes.
